Fresh Strawberry Upside-down Cake

1 cup                          butter or margarine

2 cups                        brown sugar

6 cups                        fresh strawberries (stem removed and halved)

2 tablespoon               granulated sugar

1 box                          yellow cake mix

½ cup                         chocolate sauce

Preheat oven to 350 degrees.  Melt butter or margarine in cake pan in oven.  Remove from oven and cover butter in pan with brown sugar.   Mix strawberries and granulated sugar together in bowl.  Toss until juice is produced.  Arrange strawberries cut-side up in pan on top of sugar and butter.  Save juice.

Prepare cake mix according to instructions.  Pour batter over strawberries, brown sugar, and butter.  Bake cake until center springs back when gently touched or toothpick is inserted and comes out clean.

Remove from oven and immediately place cake dish on top of cake and invert and remove pan.  Pour strawberry juice over cake and drizzle with chocolate sauce (recipe to follow).

 

 

Chocolate Sauce:

4 oz.                                       semi-sweet chocolate, chopped

7 tablespoon                           water

¼ cup                                     heavy whipping cream

¼ cup                                     unsalted butter, diced

Put all ingredients in heatproof bowl and set it over a pot of steaming water.  Stir the mixture frequently until the chocolate has melted and the sauce is very smooth.  Remove the bowl from the heat and stir well until the sauce is glassy and slightly thickened.  As the sauce cools it will thicken further.
