Ginger Spice Sugar Cookies

Dry

2 1/2 cups                  flour

2 teaspoon                 baking powder

1 teaspoon                 ginger

1 teaspoon                 cinnamon

½ teaspoon                 salt

 

Wet

½ cup                butter

1 cup                 sugar

2                       eggs

1 tsp.                 vanilla extract

1 large                egg – lightly beaten

 

Preheat oven to 400°F.   In a medium bowl sift together the flour, baking powder, ginger, and salt.

In a large bowl cream together butter, beat in sugar, eggs, and vanilla.  Mix in flour and sugar mixture together.  Using your hands, form the dough into a ball.

Roll out dough between two pieces of waxed paper until ¼ inch thick.  Using cooking cutters, cut into the desired shapes.  Brush the cookie tops with egg whites and sprinkle with sugar.   Place on baking sheet and bake for 8 – 10 minutes or until the bottoms of the cookies are browned.  Remove to a rack to cool.

Serve as is or decorate colorfully.
