2 sugar
½ cup vegetable oil
1 ½ cups shredded jicama
2 tablespoon orange juice
½ cup chopped pecans
1 ¼ cup flour
2 teaspoon baking powder
½ teaspoon salt
½ teaspoon cinnamon
½ teaspoon nutmeg
Preheat oven to 350º. Grease and flour a 9-inch square-baking pan.
In a large bowl, beat together the eggs and sugar until creamy. Stir in the vegetable oil until well combined. Add the jicama, orange juice, and pecans and mix well. Add the flour, baking powder, salt, cinnamon, and nutmeg and stir until just combined. Pour into prepared baking pan and bake for 25 - 30 minutes or until a toothpick inserted in the center comes out clean.
Allow cake to cool and then frost with favorite cream cheese frosting.
