cup sweet potato mix
2 1/4 cup flour
1 teaspoon
baking soda
½ spoon
salt
½ teaspoon
cinnamon
½ teaspoon
nutmeg

white sugar

brown
sugar

cup butter (softened)
2 large
eggs
1 teaspoon
pure vanilla extract
Optional:

cup chopped nuts

cup raisins
3 cups mini marshmallows
Preheat oven at 400 degrees. Place sweet potatoes on
baking sheet and bake for 1 hour or until ends turns black. This is the
natural sugar that comes from the potato. Remove potatoes from oven and
let cool for 10 minutes. Remove skin and place in small bowl. Set
aside.
In another small bowl, mix together all dry ingredients (except
sugars). Set aside.
In separate mixing bowl, stir together sugars, butter, eggs, and
vanilla. Mix until creamy. Slowly add egg and sugar batter to dry
ingredients. Fold in nuts, raisins, and marshmallows.
Drop Tablespoon size dough onto a cookie sheet and bake for 8 minutes.
