Ingredients:

box cooked lasagna noodles (follow
instructions on box)
½
cup vegetable oil
1
pound ground
turkey
2
cups chopped mixed greens (collard,
turnip and mustard)

slices muenster cheese
1
cup smoked cheddar
1
cup ricotta cheese
4
cups barbeque sauce
2
cups water
1 diced green bell pepper
1 diced onion
Directions:
Heat
oven to 350º. In a large skillet add ¼
cup of vegetable oil. Sauté bell peppers
and onions for 3 minutes. Add mixed
greens. Cook until vegetables are
tender. Remove from skillet and set
aside. Add remaining oil to skillet and
brown ground turkey. Add vegetables to
meat. Add barbeque sauce to meat mixture
and simmer for 15 minutes. Remove from
heat.
In
the bottom of a 9x13 baking dish or lasagna pan cover bottom of dish with meat
mixture. Layer with cooked lasagna
pasta. Cover pasta with meat sauce, with
muenster and smoked cheddar cheeses. By
spoon full, drop heaping spoonfuls of ricotta cheese and spread evenly. Repeat this procedure finishing with cheese
on top.
Place
in oven and bake for 45 minutes or until lasagna begins to boil and the cheese
is golden brown.
You
may want to cover edges with foil so edges will not burn. When the lasagna is done, let it set for
about 15-20 minutes. Cut in 4x4 inch
squares and serve with garlic bread and fresh tossed green salad. Serves 12
