 Recipe provided by Chef Amadeus of Seattle, Washington
- 2 cups Canola or
Peanut Oil
- 1 cup Collard Greens,
cooked
- 1 cup Turkey or
other Meat, cooked
- 1/2 cup Mozzarella
cheese, shredded
- 1/4 tsp Lil bump (garlic
and onion powder, cayenne and black pepper and thyme)
- 20 Large Won Ton
Wraps
- 1/2 cup Orange
Marmalade (warmed)
- Heat oil in medium
heavy bottom skillet or pot over medium heat.
- In medium size bowl
mix together greens, meat, cheese and seasoning. Set aside.
- On clean and dry cutting
board, brush the edges or won ton wrap with warm orange marmalade.
- Place approximately
one tablespoon of filling mixture in center of the wrap.
- See instructions on
wrap package on how to fold.
- Carefully place
filled wrap in hot oil (use tongs or slotted spoon). Fry till golden and crispy about 30-45
seconds.
- Remove from hot oil
and place on paper towel to drain excess oil.
To serve, place in middle of plate and top with black-eye pea
salsa Black-Eye Pea Salsa
- 2 cup Black-eye peas,
canned or pre-cooked
- 1/3 cup Red onion,
diced
- 1/4 cup Mango or
cantaloupe, diced
- 1 tbs Extra Virgin Olive
oil
- 1 tsp Cilantro,
chopped
- 1 1/2 tsp Lil Bump
- In small bowl mix
together all ingredients.
- Let chill in
refrigerator for at least 1 hour.
