Elephant Wings

6 small                                    turkey wings

½ teaspoon                                        salt

½ teaspoon                            pepper

1 Tbsp.                                   garlic

2 cups                                     peanut oil

 

Sauce:

2 cups                                     Tapatio hot sauce

2 Tbsp.                                   butter (room temp)

 

Preheat oven to 350º.  Remove wing part of turkey.  Separate leg-like portions.  Wash turkey and season.  In large skillet heat oil.  Place turkey in oil and cook just until skin becomes crispy.  Remove from skillet and place in large baking dish.  Bake for one hour or until done.

In medium saucepan heat hot sauce.  Pour into large metal bowl and add butter.  Remove turkey from oven and immediately place in bowl with sauce and coat.  Serve warm with fresh jicama and cucumber slices.
