Gourmet Sautéed Collard Greens

¼ cup                         Canola Oil

1 lrg.                           onion

4                                 garlic cloves, chopped

2 cups                         beef, turkey or pork sausage

½ teaspoon                fresh parsley

½ teaspoon                fresh oregano

½ teaspoon                bay leaves, chopped

½ ??                           lemon pepper

salt to taste

4 lbs.                           fresh collard greens, washed and chopped

½ cup                          julienne sun dried tomatoes

2 cups                         water

 

In large skillet, sauté onions and garlic until onions are caramel colored.  Add sausage; cook until heated.  Add next 5 ingredients. Stir.  Add greens and stir with wooden spoon until wilted.  Add sun-dried tomatoes and continue to stir.  Add water and simmer until greens are tender.
