loaf fresh
French bread cut into cubes (10 cups)
4 southern fried
chicken breast (left over chicken de-boned and cut into chunks)

Tbsp. butter

lg. onion

med. red bell
pepper (seeded and diced)

cup smoked Gouda cheese (grated)
½
c freshly
grated Parmesan cheese

½ cup milk
6 eggs

½ . thyme
¼
teaspoon cayenne pepper
Place
bread in a 9x13 inch baking dish, spray with non-stick cooking spray; set
aside. In large skillet, re-heat chicken
for 4-5 minutes and toss in with bread.
Melt butter in same skillet. Add
onion and cook for 10 minutes over medium heat, stirring occasionally. Add bell pepper; cook for 5 minutes
more. Add vegetables and cheeses to
bread mixture and toss lightly. Whisk
together milk, eggs, thyme and cayenne; pour over bread mixture. Cover and refrigerate overnight. When ready to bake, preheat oven to 350º
F. Remove cover from dish and bake for 1
hour or until golden brown on top and cooked through.
