Ingredients:
Grits
4 cups chicken stock or plain water
2 tablespoon butter
kosher salt to
taste

potatoes (washed)

cup vegetable oil

cup green bell
pepper
3 crushed garlic
cloves

cup white onion
salt and
pepper to taste

¼ cup vegetable oil
¼ pound ground
turkey
1 tablespoon garlic
powder
¼ cup flour
2 cups milk
2 teaspoon Cajun seasoning
white pepper
to taste
Eggs
2 tablespoon butter
or margarine
3 eggs (beaten)
Chopped green
onion (for garnish)
Directions:
In
a 2-quart saucepan bring chicken stock or water to boil. Add butter and salt. Add grits.
Set aside. In large skillet add
vegetable oil. Then add potatoes. Cook until tender. Add bell pepper, garlic, and onion. Cook for 5 minutes. Add salt and pepper. Drain excess oil and set aside in warm
oven. Grill hotlinks. Set aside.
In medium saucepan add oil and brown ground turkey. Add garlic powder and flour until thick
clumps form. Add milk, Cajun seasoning,
and white pepper. Simmer for 5 minutes
until thickens. Cover and remove from
heat. Fry eggs in butter
Building the tower: Coat the inside of a 2” metal ring
with vegetable or butter spray. Place
in center of plate. Put grits in ring
(pack firmly), then potatoes. With back
of spoon, place on top of potatoes and very lightly hold potatoes down as you
remove ring. Top with eggs, then
hotlinks. Spoon gravy around tower,
garnish with green onions. Serves 4
