Ingredients:

cups uncooked penne pasta
½ medium onion, sliced
1
clove garlic, minced
1
tablespoon olive oil
½
teaspoon basil
½
teaspoon oregano
¼
teaspoon cayenne
pepper
1
medium red bell pepper, cut into strips
1
pound fresh
collard greens
Directions:
Cook
the pasta and drain. In large skillet
add oil and cook the onion, garlic, basil, oregano, and pepper in the oil until
tender. Add the pepper strips and cook
for an additional 3 minutes. Add the collard
greens and sauté until tender. Toss with
the pasta. Top with parmesan cheese.
