Strawnge Sauce (to follow)
Salmon
Preheat oven to 400. Heat heavy bottom skillet until begins to smoke. Season salmon with salt and pepper. Add oil to skillet and place salmon in skillet and cook each side about 1 minute. Coat each side with Strawnge sauce and place in oven for 3 minutes.
Strawnge (Strawberry Orange) Sauce

orange zest |

rice wine vinegar |
| ½ cup |
soy sauce |
| 1 cup |
ketchup |

garlic cloves, minced |
| 1 Tbsp. |
fresh ginger, chopped |
| 1 Tbsp. |
black peppercorn |
| ¼ cup |
fresh squeezed limejuice |
Combine all the ingredients in a sauce pan. Bring the mixture to a boil and cook over medium low heat for 20 minutes or until reduced by 2/3. With back of spoon or potato masher, smash strawberries. Place in blender and puree. Strain through cheesecloth.
Optional: Add 2 Tbsp butter for richness.
