ARC Rice Salad

(Apples, Raisins, and Carrots)

 

Ingredients:

1 tablespoon                          butter

2 large                                     granny smith apples (diced)

1 cup                                        raisins

1 cup                                       carrots

3 cup                                       cooked rice (jasmine rice preferably)

2 tablespoon                          caramel syrup (sugar free)

2 tablespoon                          sugar

1 tablespoon                          cinnamon

½ cup                                      pecans halves

 

Directions:

Heat skillet over medium heat.  Add butter to skillet.  Add apples and cook until just tender.  Add raisins and carrots cook for about 2 minutes.  Add cooked rice and stir for about 1 minute.  Add caramel syrup, sugar and cinnamon.  Remove from heat and add nuts if desired.

Serve warm or cold.

Options: diced cooked chicken, pork or shrimp
