Potatoe Salad

Ingredients:

1 pound (4 med.)                               potatoes, washed, peeled

1 cup                                       onion, diced

½ cup                                      green onions

¼ cup                                        sweet pickle relish

½ cup                                      celery, chopped

1 tablespoon                                      sugar

½ cup                                      mayonnaise

2 teaspoon                                         mustard

½ teaspoon                                        salt

1 teaspoon                                         black pepper

4 tablespoon                                      apple cider vinegar

2 tablespoon                                      vegetable oil

2                                                          hard boiled eggs, chopped

 

Optional:

bacon bits

paprika

 

Directions:

Wash potatoes; place in saucepan.  Cover with water and bring to boil.  Simmer until soft, about 15 minutes.  Drain and cool.  Dice onions and chop celery; combine with pickle relish.  Add mayonnaise, mustard, salt, pepper, vinegar, and vegetable oil to pickle mixture.  Cube potatoes and blend with mayonnaise mixture.  Add eggs.

Cover and chill several hours.
