Ingredients:
¼ cups olive oil
2 tablespoon butter
4-6oz. boneless
skinless chicken breast (diced)
2 cups mushrooms
(sliced)
1 tablespoon salt (optional)
1 tablespoon pepper
2 tablespoon curry powder
4 cloves garlic
(minced)
2 whole jalapenos
(sliced)
4 cups fresh
spinach (coarsely chopped)
2 quarts chicken stock
or base
4 oz. coconut milk
1 teaspoon fresh thyme
(chopped)
Directions:
In large stockpot, add olive
oil and butter. Add chicken and cooked
until done. Add next seven (7)
ingredients. Add chicken stock or
base. Bring to boil. Add coconut milk and thyme. Simmer for 15 minutes and serve.
