Cabbage and Collard Greens

Cabbage and Collard Greens by Brittany Moore
Servings: 6

Ingredients
  

  • 2 pounds fresh collard greens cut and rinsed
  • 1 large cabbage cut and rinsed
  • 1 pound smoked pork or turkey bacon chopped
  • 2 tablespoons canola or vegetable oil if using turkey bacon
  • 1 large yellow or white onion diced
  • 1 large green bell pepper diced
  • 1 ½ cups water
  • 1 tablespoon garlic powder
  • 1 teaspoon onion soup mix
  • 2 teaspoons seasoning salt
  • 1 ½ teaspoons white or black pepper

Directions
 

  1. In a large pot over medium-high heat, add in the bacon (if using turkey bacon, add the oil) and fry until brown about 6 minutes.
  2. Add the onion, bell pepper and cook until translucent, about 5 minutes, then add in the cabbage and collard greens and toss together.
  3. Pour in water and sprinkle in the garlic powder, onion soup mix, seasoning salt and pepper and stir until well incorporated.
  4. Reduce the heat to medium, cover the pot and cook for 1 hour until the greens are tender (taste for more seasoning and serve.
