Fruit Slaw

Fruit Slaw

Makes 4 – 6 servings

INGREDIENTS

1 tablespoon ginger, fresh peeled and grated
1 tablespoon unseasoned rice vinegar
2 teaspoons light or dark brown sugar, packed
¼ curry powder
1/8 teaspoon red pepper flakes
½ jicama, julienned
1 green apple, julienned
1 each stone fruit: peaches, nectarines, mango, julienned
2 scallions, thinly sliced diagonally

PREPARATION

  1. In a bowl, whisk first five ingredients together.  Add fruit and mix until all is covered.  Serve or cover and store in the refrigerator.

TIPS AND NOTES

  1. Stone fruit will depend on what is in season.  Other options for this recipe include apricots, plums, apriums and pluots.
  2. For more flavor, make the slaw the day before.
