INGREDIENTS
½ cup avocado oil or olive oil
1 cup sugar
2 large eggs, well beaten
2 teaspoons vanilla
¼ teaspoon baking powder
⅓ cup cocoa powder
¼ teaspoon salt
½ cup flour
¼ cup Kahlua
PREPARATION
- Preheat oven to 350 ºF.
- Mix oil and sugar together in a large bowl until well blended. Add eggs and vanilla and stir just until blended.
- Mix baking powder, cocoa powder, salt and flour in a separate bowl. Stir ingredients into the oil/sugar mixture.
- Pour mixture into a greased 8×8 pan. Bake for about 20 minutes or until the sides start pulling away from the pan. Cool completely.
- With your hands crumble the brownie into chunks. Drizzle the Kahlua over the brownie chunks and mix lightly and serve alone with vanilla bean ice cream.
NOTES & TIPS
Sprinkle with your favorite nuts for an extra guilty treat.
