Ingredients
- 2 pounds sweet potatoes washed and dried (2 cups puréed)
- 2 large eggs
- 1 cup brown sugar
- 1 cup white sugar
- ½ cup melted butter
- pinch kosher salt
- ½ teaspoon ground nutmeg
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1 can evaporated milk
- 2 tablespoons orange juice
- 1 9-inch unbaked pie shell
Directions
- Beat eggs, add sugar and mix well.
- Add remaining filling ingredients. Mix at a high speed, strain and pour into pie shell.
- Bake at 400°F for 10 minutes, reduce heat to 350°F, bake 50 minutes longer. Serve warm.
