Ingredients

  • ½ cup avocado oil or olive oil
  • 1 cup sugar
  • 2 large eggs well beaten
  • 2 teaspoons vanilla
  • ¼ teaspoon baking powder
  • ⅓ cup cocoa powder
  • ¼ teaspoon salt
  • ½ cup flour
  • ¼ cup Kahlua

Directions

  1. Preheat oven to 350 ºF.
  2. Mix oil and sugar together in a large bowl until well blended. Add eggs and vanilla and stir just until blended.
  3. Mix baking powder, cocoa powder, salt and flour in a separate bowl. Stir ingredients into the oil/sugar mixture.
  4. Pour mixture into a greased 8×8 pan. Bake for about 20 minutes or until the sides start pulling away from the pan. Cool completely.
  5. With your hands crumble the brownie into chunks. Drizzle the Kahlua over the brownie chunks and mix lightly and serve alone with vanilla bean ice cream.
