
Ingredients
- 1 1/8 cups butter (250 grams), frozen and shredded
- 6 cups flour (750 grams)
- 3 3/4 tablespoons baking powder (30 grams)
- 3/4 tablespoon kosher salt (12 grams)
- 5 1/2 cups cheddar cheese (453 grams), shredded
- 3/4 teaspoon dried chives (2 grams)
- 4 1/2 tablespoons honey (90 grams)
- 1 3/4 cups buttermilk (45 grams)
Directions
- Place flour, salt and baking powder in a mixing bowl. Mix dry ingredients well. Add shredded butter and mix. Mix in shredded cheddar cheese and chives.
- In a separate bowl, mix buttermilk and honey.
- Make a “well” in the flour and slowly pour in buttermilk and honey mixture. Use an electric mixer with a dough hook or mix with hands until dough comes together in a ball. Place the dough ball onto a floured surface.
- Roll out dough to a half-inch thickness, then fold the dough into a tri-fold. Repeat rolling and folding dough into tri-folds two more times. Roll dough to a 1/4-inch thickness and cut out biscuits into 3-inch squares.
- Place biscuits onto a greased cookie sheet. Bake at 400 degrees for 25 minutes until biscuits are golden on top.
