Ingredients
- 2 pounds ground pork or ground chicken
- 1 cup butter (250 grams),
- 1 cup onion (250 grams), diced
- fresh sage, chopped to taste
- fresh thyme, chopped to taste
- 2 3/4 tablespoons Sausage Season Kit (40 grams)
- 3 tablespoons salt (50 grams)
- 2 tablespoons black pepper (30 grams)
- 1 3/4 tablespoons chicken bouillon (25 grams)
- 1 cup flour (226 grams)
- 1 gallon milk
- 3/4 teaspoon tabasco (3 grams)
- 3/4 teaspoon paprika (3 grams)
- 1 teaspoon cayenne (5 grams)
Directions
- Cook ground pork or ground chicken in butter. Add onions and cook through until browned.
- Add half of the fresh herbs and all of the seasonings and mix well.
- Add flour and cook on medium heat for about 7 minutes. Add milk, stirring constantly.
- Simmer (do not allow to boil) until mixture thickens and flour taste is cooked out Add the rest of fresh herbs. Serve gravy over fresh buttermilk biscuits. Garnish with herbs and fried chicken skins (optional).
